D's Easy Veggie Chili

[b]Key thing: I make it a day or two before, preferably on the low heat setting.[/b]

Into the slow cooker, I put a
big can of stewed tomatoes
big can of tomato sauce
big can of black beans
big can of red beans
lots of lawry's seasoning salt
some black pepper

later, you'll stir in sauteed chopped yellow onion, red and green bell peppers. sometimes i add carrot for color and more veggie content

This canned convenience makes it easy to do at a workplace or similar, showing 'em how simple it can be to do a common meal vegan style :-)

My Mac & FYH cheese

2 packs of Follow Your Heart (one Cheddar and one Monterey Jack)
2 sticks of soy margarine
1 lb (box) of boiled and drained elbow macaroni
1/2 tsp salt
1/8 tsp pepper
Splash(es) of soy/rice milk

Preheat oven to 375º
Melt margarine in large skillet over a low heat. Keep both wrappers
Open both FYH packs
Slice away a bit more than half of each. Put aside smaller halves
Slice both larger halves quite thin, add those promptly to melting margarine
Stir melting mixture
Add splash(es) of soy milk
Stir until all melted and gooey. (And yes, it looks like a small amount in there.)
Remove from heat
Slice remaining smaller "halves"
Take out your big baking dish
Rub margarine wrapper insides on dish
Line bottom of dish with a bit more than half macaroni
Add smaller halves' slices, alternating flavors across
Add remaining macaroni on top
Pour mixture very very slowly around the edges and then middle
Bake 25 minutes
Serve and enjoy

Lemon Sage Dressing (New Englander)

1 cup soy margarine

1 green and 1 red bell pepper, diced
1/4 cup diced yellow onions
1/2 cup diced carrot

2/3 loaf bread Type A (I like a Sunflower Whole Wheat here), torn to bits
2/3 loaf bread Type B (Definitely a multi-grain with some "personality"), torn to bits

1/2 tsp salt
1/8 tsp pepper
1 1/2 cups of vegetable broth

1/2 tsp grated lemon peel
1/2 tsp dried sage leaves

Preheat oven to 325º
Melt butter in large skillet
Add diced vegetables
Saute until vegetables are tender
Stir in salt, pepper, broth and lemon peel
Pour mixture over bread cubes in pan
Squeeze a little lemon juice quickly over entire mixture in pan. Follow with sprinkling sage over it
Bake 35 minutes
Serve and enjoy.

Lemon Sage Dressing (Phoenician)

1/2 cup soy margarine
1 cup sliced celery
1/2 cup sliced green onions
1/2 cup shredded carrot
1/2 loaf bread, torn to bits
1/2 tsp grated lemon peel
1/2 tsp dried sage leaves
1/2 tsp salt
1/8 tsp pepper
1 1/2 cups of vegetable broth

Preheat oven to 325º
Melt butter in large skillet.
Add celery, onions, and carrot.
Saute until vegetables are tender.
Stir in remaining ingredients.
Pour into 1 1/2 quart casserole and bake 30-45 minutes.

Makes 8 servings

Soulful Vegie Collards

2 bundles of collards
1 red bell pepper
1 veg bouillion cube, with salt (I use the Rapunzel brand)
1 FieldRoast™ Chipolte Veg Sausage link

Starting boiling water - only need 1/2 cup
Chop up bell pepper and sausage. Typically, I cut the link into half moons maybe three quarters ($0.25) thick
Heat big pot, with a bit of olive oil, on very low. Will need a cover for this pot later
Put veg bouillon in measuring cup. Pour 1/2 cup of boiling hot water over it. Set aside
Put bell pepper and sau
Rinse/clean collards, keeping each bundle arranged how it was for easier cutting
Roll each bundle tightly. Cut into sections between one and two fingers wide, then cut these into small squares, about half dollar size
Place collard pieces into pot with bell pepper and sausage pieces
Pour cup contents over collards
Cover and keep on low heat, for at least 15 minutes
Remove from heat for 3-5 minutes before serving - these will be piping and spicy hot.
Serve and enjoy!

I like to serve these with
A) GardenBurger™ Riblets (their Herb Crusted Cutlet or Chik’n Grill), corn and sometimes Soulghetti™ - a D original, circa 1991
B) Mock Chicken Nuggets (Trader Joe's yellow box ones are vegan, frugal and very very good) with Follow Your Heart mac and not-cheese, or
C) a simple red beans and rice, with cornbread
